TONE Cozy Turmeric Lentil Soup

This is one of those cozy, go-to recipes I make when I want something warm and healing. It’s full of anti-inflammatory spices, plant-based protein, and nourishing ingredients that support digestion, energy, and overall wellness. Simple, soothing, and perfect for a winter reset.

This is one of those cozy, go-to recipes I make when I want something warm and healing. It’s filled with anti-inflammatory spices, plant-based protein, and nourishing ingredients that support digestion, energy, and overall wellness. Simple, soothing, and perfect for a winter reset.

Ingredients

Makes 3–4 servings

Base

 

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

 

Spices

 

  • 1 teaspoon turmeric

  • 1 teaspoon cumin

  • ½ teaspoon paprika

  • ½ teaspoon sea salt

  • Black pepper, to taste

 

Broth & Lentils

 

  • 1 cup red lentils, rinsed

  • 4 cups vegetable broth

  • 1 cup water

  • Juice of ½ lemon

 

Optional

 

  • A handful of spinach

  • Coconut milk swirl

  • Fresh parsley

How to Make It

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 4–5 minutes until softened.

  2. Add minced garlic and all spices. Cook for 1 minute until fragrant.

  3. Stir in the red lentils, vegetable broth, and water. Bring to a boil.

  4. Reduce heat, cover, and simmer for 18–20 minutes until lentils are soft.

  5. Stir in lemon juice. Add spinach if using and let it wilt.

  6. Taste and adjust seasoning. Add more salt, pepper, or lemon as desired.

  7. Serve warm, with a swirl of coconut milk or fresh parsley if you like.

TONE Tip

I love making a batch of this at the start of the week so I always have something warm and nourishing to reach for. Add a squeeze of extra lemon before eating for brightness, or swirl in a touch of coconut milk for creaminess. Make it your ritual.
